Definition
- The extrusion cooking process involves forcing a material to flow under a variety of controlled conditions and then to pass through a shaped hole or slot at a predetermined rate. It can be used for several functions including mixing, cooking, forming, conveying, puffing or drying depending on the extruder design and the process conditions. (Source : INRA)
