- In the Compton effect, an incident photon interacts with the atoms and transfers its energy, causing ejection of electrons. The ejected electrons, called Compton electrons, contain enough energy to cause further excitation and ionization in the food material. The incident photon continues after collision in a changed direction with less than its original energy. (Source : INRA)
