  • [...] the Compton effect is the principal mechanism of energy transfer in food irradiation with these radiations [gamma- and x-rays]. In the Compton effect, an incident photon interacts with the atoms and transfers its energy, causing ejection of electrons. The ejected electrons, called Compton electrons, contain enough energy to cause further excitation and ionization in the food material.
