- Dry matter is what is obtained when water is removed from a product. The percentage of dry matter is the ratio between the mass of dry matter and the mass of non-dry matter (hydrated). Thus the percentage of dry matter (% DM) is almost zero for gases, is variable for a living being (about 5 to 10% for a plant, about 45% for an adult human being), but with certain materials it approaches 100% DM (sands, etc.).
